This chicken and broccoli recipe is perfect for those nights when you need to eat on the table.

For years, it’s been a staple in my repertoire of healthy and quick dinners. Since I posted the recipe on my blog four years ago many of you have made it and love it. Understandably! This recipe is quick and simple to prepare. The zesty stir-fry sauce uses only the basic ingredients that you have on hand. And the classic combination of chicken and broccoli is always a hit. Healthy and simple stir-fry!

Although I still love the chicken and broccoli combination, this recipe is extremely versatile. Feel like substituting a different protein? You can do it. Do you have any leftover zucchini, onions, bell peppers, or other vegetables? You can toss them in, too. You can serve it over quinoa, noodles, or just some sauteed vegetables. You can use whatever you have! You can customize this recipe to your liking. This base recipe is a great place to start.

CHICKEN AND BROCCOLI

In case you need to refresh your memory, here is a quick tutorial about how to chop broccoli.

It’s really not complicated, as you can see. Simply cut up some chicken breasts and make bite-sized pieces. Saute them until they are cooked through in a skillet. Add the chopped broccoli to the skillet and cook for another few minutes until the chicken turns bright green and is slightly tender (but mine likes to be still very crisp).

While the broccoli and chicken are cooking, make a stir-fry sauce. As I said, the ingredients in this recipe are limited to pantry staples. I hope you find it useful! It should be easy to make, and you won’t have to go to the supermarket. Stir it in just before the end and continue stirring for about a minute until the mixture thickens.

CHICKEN AND BROCCOLI

DESCRIPTION

This chicken and broccoli stir-fry recipe is quick and easy.

STIR-FRY INGREDIENTS:

  • 2 tablespoons Olive oil, divided
  • 2 Boneless Skinless Chicken Breasts, Cut into Bite-Sized Pieces
  • Salt and pepper
  • 1 mixed Stir-Fry Sauce (see further)
  • 1 lot broccoli, cut into small florets and discarded at the stem
  • 1 teaspoon toffee sesame oil
  • Toppers: Sliced green onions, toasted sesame seed

STIR-FRY SAUCE INGREDIENTS

  • 2/3 cup water
  • 1/3 cup reduced-sodium soy sauce
  • 3 tablespoons rice vinegar
  • 2 tablespoons cornstarch
  • 2 tablespoons honey
  • 2 garlic cloves, peeled & minced
  • 1 teaspoon ground ginger

INSTRUCTIONS

TO MAKE THE STIRFRY:

  1. In a large skillet, heat 1 tablespoon oil on medium-high heat. Season the chicken breasts with salt and pepper. Stirring occasionally for 5 minutes, cook the chicken until it is mostly cooked through.
  2. Make your sauce while the chicken is cooking. (See below. )
  3. After the chicken has browned, add 1 tablespoon olive oil to the bowl with the broccoli and stir. Cook for 3 more minutes until the broccoli turns bright green. Stir in the sauce and continue cooking for 1 minute more until sauce thickens. Stir in the sesame oil and remove from heat.
  4. Serve warm with green onions and toasted sesame seed garnish. You can also transfer the mixture to a container and let it cool in the refrigerator for up to three days.

TO MAKE THE SAUCCE:

  1. Mix all ingredients in a bowl until well combined.

NOTES

To add a little more flavor, I tweaked the sauce recipe from 2017. It should taste exactly the same. 🙂
