This might be your new favorite mug cake recipe, mug cake lovers! This Cinnamon Nut Swirl Mug Cake can be described as a quick cinnamon roll without the need for kneading or rising. This mug cake is perfect for quick fixes when you only need a few bites of cinnamony sweetness and don’t want to have a whole batch of cinnamon rolls staring at you all day. You don’t need a cinnamon roll as big as your head, and you don’t want to spend $5 on one. While I love cinnamon rolls that large, I don’t require cinnamon rolls this big.

Do I have to use a MICROWAVE?

This recipe was specifically designed for the microwave. Ovens cook at slower speeds, so this recipe will need to be adjusted and tested. This recipe is not suitable for traditional ovens.

CAN I USE MILK FROM A NON-DAIRY RESTAURANT?

INGREDIENTS

MUG CAKE BATTER

  • 1/4 cup all-purpose flour ($0.03)
  • 1 Tbsp brown sugar ($0.04)
  • 1/4 teaspoon baking powder ($0.01)
  • 1/8 tsp salt ($0.01)
  • 1/8 teaspoon cinnamon ($0.02)
  • 1 Tbsp chopped walnuts or pecans (optional) ($0.16)
  • 1/2 Tbsp butter, melt ($0.03)
  • 2 Tbps milk ($0.04)

CINNAMON BUTTER SWIRL

  • 1/2 Tbsp butter, melt ($0.03)
  • 1 teaspoon brown sugar (0.02)
  • 1/2 teaspoon cinnamon ($0.05).

ICING

  • 1 Tbsp powdered sugar ($0.01)
  • 1/2 tsp milk ($0.01)

INSTRUCTIONS

  • Mix the dry ingredients for the mug cakes batter in a small cup (about 1 cup).
  • Mix the milk and butter in a mug until you get a thick batter.
  • Heat the butter in a separate bowl or mug to make the cinnamon butter swirl. This will take about 15 seconds in the microwave. In the melted butter, stir the cinnamon and brown sugar.
  • Spread the cinnamon butter swirl on the mug cake batter. Then, gently fold the two together until the batter is just half-mixed. The batter should have a thick cinnamon butter swirl all over it.
  • Microwave the mug cakes for 45 to 55 seconds. (For an 1100-watt microwave, the cooking time will vary depending on microwave wattage). You shouldn’t be alarmed that the mug cake will produce a lot of steam during cooking. Allow the mug cake to cool for about 1-2 minutes.
  • Mix the powdered sugar, milk, and cinnamon butter in the same bowl that was used to make the cinnamon butter swirl. Let cool the mug cake. The icing will be flavored with the cinnamon that remains in the bowl.
  • Spread the icing on the mug cake, and serve it warm.
