Warming flavors come to mind when I think of winter cocktails. It could be the warmth of a whisky, rum, or even a spice such as cinnamon or nutmeg used to garnish. UK-style porters, stouts’ roasted toffee, and nutty flavors complement brown spirits. During the winter, switch it up and go for more tropical flavors. This holiday season, try some of the tried-and-true beer cocktail recipes.

Colonial Flip

1 egg 1 1/2 oz aged rum 1/2 oz demerara syrup* 3 oz stout 2 cinnamon sticks Directions:

1. Shake egg, syrup, and rum in a shaker. Add one ice cube.

2. Shake the egg to emulsify it. 3. Pour the stout into the shaker. Shaker glass on top.

4. Flip the liquid around in a glass to make a cocktail with foam.

5. Pour the mixture into toddy glasses, and garnish with cinnamon sticks.

* In a large pot, combine 1 cup of demerara sugar (raw) with 1 cup of water. Bring to a rolling boil. Remove from heat when the sugar has dissolved.

Heritage Properties

Directions:

1. Add Cobblestone Stout Syrup, Bitters, and Bourbon to a rocks Glass.

2. Pour ice into the glass and stir for about 20-25 seconds or until the drink is diluted.

3. Orange peel is a great garnish.

* Place a pot on medium heat. Add a 473ml Mill Street Cobblestone Stout can. Reduce the beer to two-thirds of its original volume. Continue heating the beer while adding a cup of sugar. Stir until all the sugar has dissolved. Remove from heat. Refrigerate until ready to use.

Cranberry Cringle

Directions:

1. Shaker filled with ice; add cranberry syrup, gin, and liqueur.

2. Shake until the water is freezing.

3. Pour the Creature Feature IPA into a coupe and then top it off.

4. Garnish the dish with cranberries, rosemary sprigs, and some cranberries.

Combine 1 cup sugar, two rosemary sprigs, and 1 cup of cranberries in a large pot. Bring to a rolling boil. Remove from heat when sugar dissolves. Let cool.

Christmas in the Tropics

White sugar 1 oz white rum 1 oz Bols Blue Curacao 1 oz cream of Coconut 3 oz Propeller Galaxy IPA

Directions:

1. Riming a coupe with white sugar to create a frosty appearance.

2. Pour rum, Curacao, and cream of Coconut into a cocktail shaker filled with ice.

3. Shake well.

4. Pour Propeller Galaxy IPA into coupe glasses, and add equal quantities.
